93 Days. Growers have been asking us for a more uniform spaghetti squash and this is it. Primavera is a very uniform, high yielding, 2.5 - 3 lb. variety with a very nice, canary yellow skin color at maturity. Its more compact vine allows for a more concentrated fruit set. Harvest when skin feels tough and squash are fully yellow.
Plant in full sun in soil that is well amended with compost and a good vegetable fertilizer. Give each plant about 2 feet of space between plants.
To cook, slice squash in half, scoop out the seeds, coat with olive oil and bake cut side down at 350 degrees for 45 minutes to 1 hr. Cool slightly then scrape the inside with a fork for separate the strings. Use as you would spaghetti and cover with sauce and cheese or pesto and fresh tomatoes.
