Cilantro

Cilantro is a cool season herb that produces rosettes with finely divided, deep green leaves. Plant in full sun or partial shade in soil amended with plenty of compost, and feed with a high nitrogen fertilizer. Cilantro will also grow very well in containers. If growing in a container, we recommend using Fox Farm Ocean Forest potting soil.

Planting your 6 pack: Plant each cluster of seedlings 6-8 inches apart, and water in after planting.

Harvest by picking off the outer leaves of the rosette, and plants will regrow from the center. Or, you may shear the entire plant off at the top leaving about 1 inch from the base to re-grow. Chop up the raw leaves and add to salads, pasta dishes and soups. Cilantro is highly nutritious and beneficial to your health! We love to juice it along with carrots. You can also make a fantastic pesto with it, just substitute cilantro for basil.

Shelling Peas 'Spring'

This is a very bearing early shelling pea that bears large crops on shorter plants. Pods hold 6-7 plump peas, vines grow 20" tall. Plant shelling peas in full sun, in soil amended with plenty of compost. If your soil is acidic, add ground dolomitic limestone to raise the pH. Peas require a fertilizer high in phosphate and potash.

Plant each cluster of 2-3 seedlings 6 inches apart. Shelling peas will grow and produce best when grown on a vertical trellis. Keep peas well watered and weeded. Peas will benefit from mulching around the roots in order to help keep them cool and wet.

Pick them when the peas are fully filled out in the pod. Open up the pods and pop out the peas. Regular harvesting will keep plants producing for a long time. If not picked regularly, pea plants will stop producing. They also stop producing as soon as the weather gets hot.

Snow Peas

Plant snow peas in full sun, in soil amended with plenty of compost. If your soil is acidic, add ground dolomitic limestone to raise the pH. Snow peas require a fertilizer high in phosphate and potash.

Plant each cluster of 2-3 seedlings 4 inches apart. Snow peas will grow and produce best when grown on a sturdy, vertical trellis. Keep snow peas well watered and remove weeds. Snow peas will benefit from mulching around the roots in order to help keep them cool. Plants grow 24-36 inches tall, with 4-5 inch pods.

Pick them when the tiny peas are just beginning to swell inside their pods, usually 5-7 days after flowering. Regular harvesting will keep plants producing for a long time. If not picked regularly, snow pea plants will stop producing. They also stop producing as soon as the weather gets hot although they are a bit more tolerant of heat than English peas.

Spinach 'Tyee'

Spinach is a fast growing crop that produces rosettes with large, deep green leaves. Plant in full sun or partial shade in soil amended with plenty of compost. Feed with a high nitrogen fertilizer, spinach has high nitrogen needs. Water regularly.

Planting your 6 pack: Either separate each seedling by carefully teasing apart the roots and plant each seedling 6-8 inches apart, and water immediately after. Or, plant the cluster of seedlings 10 inches apart. Water in after planting.

Harvest by picking off the outer leaves. Plants will regrow from the center. Try spinach steamed then drizzled with olive oil and lemon, in salads or saute with carmelized onions and pine nuts (one of my favorite ways!).

Romaine Lettuce

Romaine Lettuce is a fast growing variety that produces tall, flavorful heads of bright lime green leaves. This delicious, sweet lettuce is very cold and heat tolerant. Plant in full sun or partial shade in soil amended with plenty of compost, and feed with a high nitrogen fertilizer.

Planting your 6 pack: Plant each seedlings 8-12 inches apart, and water in after planting.

Harvest by picking the outside leaves and the plants will regrow from the center, or by cutting off the entire head at the base when they are well filled out. When weather begins to warm up, harvest entire plants before they begin to bolt. Jeroicho makes a great Ceasar Salad!

Napa Cabbage 'Kaboko'

Napa Cabbage 'Kaboko' is a cool season vegetable that produces densely packed heads that are 12 inch tall heads with thick, crispy light green leaves. The flavor is exceptionally sweet. Plant in full sun in soil amended with plenty of compost. Feed with a high nitrogen fertilizer for large, juicy leaves. Water regularly.

Planting your 6 pack: Plant each seedling 12-16 inches apart. Water in after planting.

Harvest by cutting off the entire plant at the base when the heads are well filled out and firm to the touch. Napa Cabbage is delicious in stir fries with ginger and garlic. Napa Cabbage makes a great coleslaw and can also be made into Kim Chi.

Marigold 'Crackerjack Mix'

Marigolds are easy to grow and require little care. Crackerjack Mix has bright ball-shaped flowers in yellow and orange on sturdy plants 2-3 ft. tall.

Plant in full sun and water regularly until they start to grow vigorously. After they are established, they can tolerate drier conditions.

They make a nice cut flower and they also attract butterflies to the garden. They grow well with Zinnias and Sunflowers to make a nice bright flower border.

Squash 'Tromboncino'

This Italian summer squash is a wonderful diversion from the usual. A vining variety that is best trellised for straighter fruit. Plants will grow to 6 feet tall. The light green fruit can grow up to 3 feet long and may be harvested from just a few inches through its full size.

Tromboncino has a rich flavor steamed, grilled, or sliced raw in your favorite salad. Plant in Full sun in soil amended with compost and a good vegetable fertilizer. Water regularly.

Patty Pan or Scallop Squash

Plant Patty Pan Squash in full sun, in soil that is amended with compost and a good organic fertilizer. Water regularly to keep these vigorous plant producing sweet and tender squash. Space plants at least 1 1/2 feet apart to give them plenty of room.

Harvest when squash are still small, while the skin is still tender and the seeds inside are undeveloped for the best flavor.

Summer squash are delicious tossed with olive oil and fresh herbs then oven roasted. They are also delicious sauteed with butter and garlic. Try slicing some ¼ inch thick and frying until crispy like chips.

Cauliflower 'Amazing'

Cauliflower thrives in cool weather.  It is best planted in full sun, too much shade will cause heads to be small.  Soil should be amended with compost and cauliflower benefits from a fertilizer high in phosphorus and potassium.  It is essential to water regularly so that the plants will produce large, uniform heads.

Planting your 6 pack:  Space each seedling about 18-24 inches apart.  Water in after planting.

This variety ‘Amazing’ tends to be self-blanching, meaning that the leaves stay curled over the heads keeping the heads a nice pearly white.  Cauliflower is delicious steamed, sauteed, or  tossed with a little olive oil and breadcrumbs and oven roasted.

Collard Greens 'Flash'

Collard Greens 'Flash' is a cool season variety that produces large green leaves on plants that reach 18-24 inches tall. Plant in full sun or partial shade in soil amended with plenty of compost, and feed with a high nitrogen fertilizer for sweeter, tender leaves.

Planting your 6 pack: Plant each seedlings 12-18 inches apart, and water in after planting.

Harvest by picking off the lower leaves, and plants will continue to grow from the center. Young leaves are great raw in salads or wraps. Older leaves are good chopped up and steamed or sauteed, and in soups, pastas, bean or grain dishes.

English Cucumber

These vining plants produce abundant 8-12 inch long smooth skinned cucumbers with a juicy sweet flavor. Grow plants on a tomato cage to save space and keep the plants and fruit clean. Growing them trained upwards will help the cucumbers stay nice and straight.

Cucumbers want full sun and very warm conditions for best production. Amend soil with plenty of compost and a good organic vegetable fertilizer. Space plants 1.5 feet apart and water regularly.

Harvest cucumbers before they are too mature and the seeds inside develop. Slice them up in salads, or have them with dip. They are also delicious on a sandwich or wrap.

Italian Arugula

Italian Arugula is a fast growing, cool season variety that produces many tender leaves with a rich, peppery taste. Plant in full sun or partial shade in soil amended with plenty of compost. Feed with a high nitrogen fertilizer for the largest leave and mildest flavor. Water regularly. This variety will also grow very well in a container.

Planting your 6 pack: Plant the cluster of seedlings 8 inches apart. If you are feeling brave, the clusters of plants may be divided and spaced 6-8 inches apart. Water in right after planting.

Harvest by shearing off leaves at the base when they are large enough. The plants will grow back many times after cutting. My favorite salad is Arugula mixed with sweet lettuces, thinly sliced kumquats, and avocado, with a citrus dressing. It is great on pizza with mozzarella cheese and you can even make a fantastic pesto with it, just substitute arugula for basil. Even the flowers of arugula are edible!
